  • 1 head cauliflower cut into bite‑size florets
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Sauce
  • 1/2 cup buffalo sauce store‑bought or homemade
  • 2 tbsp unsalted butter melted
  • 2 tbsp plain Greek yogurt optional for coating
Topping
  • 1 tbsp fresh parsley chopped, optional

Method
 

Steps
  1. Preheat the oven to 425°F (220°C).
  2. Pat the cauliflower florets dry with paper towels to remove excess moisture.
  3. In a large bowl, toss florets with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  4. Spread the florets in a single layer on a parchment‑lined baking sheet.
  5. Bake for 20 minutes, flipping halfway through, until edges are golden and crisp.
  6. While the cauliflower bakes, whisk together buffalo sauce, melted butter, and yogurt in a small bowl.
  7. Remove florets from the oven and drizzle the sauce mixture over them, tossing gently to coat.
  8. Return to the oven for an additional 5 minutes to set the sauce.
  9. Transfer to a serving platter, sprinkle with parsley, and serve hot with your favorite dip.

Notes

Store in an airtight container at room temperature for up to 2 days. Reheat in a 400°F oven for 5–7 minutes to restore crispness. Serve immediately for best texture.
