Method
 

  1. Combine the rolled oats, grated carrots, dates, and raisins in a food processor. Process until the mixture is well combined and sticks together when pressed between your fingers.
  2. Add the chopped walnuts, shredded coconut, almond butter, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt to the food processor. Pulse until all ingredients are evenly distributed and the mixture forms a sticky dough.
  3. Portion the mixture using a tablespoon or a small cookie scoop and roll into balls. If the mixture is too sticky, wet your hands slightly before rolling.
  4. Place the rolled balls onto a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
  5. Once set, the energy bites are ready to be enjoyed. Store any leftovers in an airtight container in the refrigerator.
