  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 salt to taste
  • 1 black pepper to taste
  • 1 cucumber diced
  • 1 tomato diced
  • 1 red onion thinly sliced
  • 1 feta cheese crumbled (optional)
  • 1 tzatziki sauce store‑bought or homemade
  • 2 cups cooked pasta or grain optional, e.g., grilled corn pasta

Method
 

Steps
  1. Preheat a grill or grill pan to medium‑high heat.
  2. In a small bowl, whisk together olive oil, oregano, garlic powder, smoked paprika, salt, and pepper.
  3. Pat the chicken dry and rub with the spice mixture.
  4. Grill the chicken for 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 5 minutes, then slice into strips.
  6. While the chicken rests, toss cucumber, tomato, and red onion with a pinch of salt and pepper.
  7. If using pasta or grain, warm it briefly in the microwave or skillet.
  8. To assemble, layer the cooked pasta (if using), sliced chicken, fresh veggies, crumbled feta, and a generous spoonful of tzatziki.
  9. Serve immediately or cover and refrigerate for up to 48 hours.

Notes

Store separately in airtight containers; reheat chicken briefly before serving. Great for meal prep or a quick weeknight dinner.
