  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon lemon juice use fresh juice for best flavor
  • 1 lemon lemon zest
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper optional, for heat
  • 1 pinch salt
  • 1 pinch black pepper
  • 2 tbsp fresh parsley, chopped for garnish
  • 4 lemon wedges for serving optional

Method
 

Steps
  1. Preheat grill to medium‑high (375–400°F).
  2. In a bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, smoked paprika, cayenne pepper, salt, and pepper.
  3. Add shrimp to the bowl, tossing to coat. Cover and refrigerate for 15–20 minutes.
  4. Thread shrimp onto soaked wooden skewers or metal skewers.
  5. Grill shrimp 2–3 minutes per side, turning once, until pink and opaque. Internal temperature should reach 145°F (63°C).
  6. Remove from grill, garnish with parsley, and serve with lemon wedges.

Notes

Marinate up to 2 days ahead; refrigerate. Store cooked shrimp in an airtight container for up to 2 days. Reheat gently in a skillet or microwave for 30 seconds. Serve over salad, couscous, or quinoa.
