Ingredients
  

Shrimp & Marinade
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp garlic powder
  • 1 tsp cumin
  • to taste salt and pepper
Mango Salsa
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 2 tbsp fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tbsp honey or agave syrup
  • pinch sea salt

Method
 

Steps
  1. Rinse and pat dry the shrimp, then toss with olive oil, smoked paprika, cayenne, garlic powder, cumin, salt, and pepper. Let marinate 15 minutes.
  2. While the shrimp marinates, combine mango, bell pepper, onion, jalapeño, cilantro, lime juice, honey, and sea salt to create the salsa. Mix gently and set aside.
  3. Thread shrimp onto skewers (pre‑soaked wooden skewers or toothpicks). Grill over medium‑high heat 2‑3 minutes per side until pink and opaque.
  4. Serve hot shrimp topped with generous spoonfuls of mango salsa. Enjoy immediately.

Notes

Store leftover shrimp and salsa separately in airtight containers. Reheat shrimp briefly; warm salsa in microwave 10‑15 seconds. Serve with mixed greens or quinoa for a complete meal.
