  • 1.5 lb pork tenderloin
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp Dijon mustard
  • 3 tbsp maple syrup
  • 2 cloves garlic minced
  • 2 sprigs fresh thyme
  • 1 tbsp unsalted butter
Glaze
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp soy sauce
  • 1/2 tsp garlic powder
Optional Sweetener
  • 1 tbsp brown sugar optional for extra sweetness

Method
 

Steps
  1. Preheat the oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels.
  2. In a small bowl, combine olive oil, salt, pepper, Dijon mustard, maple syrup, minced garlic, and thyme. Rub the mixture all over the pork.
  3. Heat an oven‑proof skillet over medium‑high heat. Sear the pork 2–3 minutes per side until golden brown.
  4. Transfer the skillet to the preheated oven and roast 12–15 minutes, or until the internal temperature reaches 145°F (63°C). Remove, tent with foil, and rest 5 minutes.
  5. While the pork rests, whisk together maple syrup, Dijon mustard, soy sauce, and garlic powder for the glaze.
  6. In the same skillet, melt butter and pour the glaze over the pork. Simmer over low heat until thickened, about 2–3 minutes.
  7. Slice the pork, drizzle with the glaze, and serve immediately with your choice of sides.

Notes

Let the glazed pork rest before slicing to keep juices locked in. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
