  • 1 cup unsweetened almond milk
  • 2 tbsp chia seeds
  • 1 tbsp matcha powder
  • 1 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract

Steps
  1. Whisk the almond milk, matcha powder, honey, and vanilla together in a bowl until the matcha is fully dissolved.
  2. Stir in the chia seeds so they’re evenly distributed.
  3. Cover the mixture and refrigerate for at least 4 hours or overnight to allow the chia seeds to expand.
  4. Before serving, give the pudding a good stir to break up any clumps and top with your choice of berries, coconut, almonds, or extra matcha powder.

Notes

Store in an airtight container in the refrigerator for up to 3 days. Stir well before serving. Let sit at room temperature for 10 minutes if you prefer a softer consistency.
