A quick, umami‑rich cod dish glazed with miso, mirin, and soy sauce, finished with sesame seeds and scallions.

Ingredients
  

Fish
  • 4 fillets cod fillets (6 oz each) firm, skin on or off
Pan
  • 2 tbsp olive oil
Glaze
  • 3 tbsp white miso paste
  • 2 tbsp mirin or sake
  • 1 tbsp soy sauce low‑sodium
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, minced
Garnish
  • 1 tsp sesame seeds
  • 2 scallions sliced green parts only
Seasoning
  • to taste salt
  • to taste black pepper

Method
 

Steps
  1. Pat the cod fillets dry and season lightly with salt and pepper.
  2. Heat olive oil in a skillet over medium‑high heat until shimmering.
  3. Place the fillets skin‑side down and sear for 2–3 minutes until golden.
  4. Flip the fillets and add the miso glaze mixture to the pan.
  5. Cook for another 2–3 minutes, spooning glaze over the fillets until the sauce thickens.
  6. Remove from heat, transfer to a plate, and garnish with sesame seeds and sliced scallions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat, adding a splash of water if the glaze has thickened. Serve over steamed rice or sautéed greens.
