Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tbsp sugar
Filling
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries pureed, strained
  • 1 cup heavy cream whipped to soft peaks
Topping
  • 1 cup sliced strawberries
  • few mint leaves optional

Method
 

Steps
  1. Press the graham cracker crumbs, melted butter, and sugar into a 9‑inch square pan to form the crust.
  2. In a bowl, beat the softened cream cheese until smooth, then add powdered sugar and vanilla.
  3. Fold in the pureed strawberries, then gently fold in the whipped cream.
  4. Spread the mixture over the crust and refrigerate for at least 4 hours, preferably overnight.
  5. Before serving, top with fresh strawberry slices and mint leaves.

Notes

Store refrigerated; keep chilled until serving. Can be made a day ahead.
