Method
 

  1. Begin by preparing the blueberry compote. Combine the blueberries, honey or maple syrup, vanilla extract, ground cinnamon, and lemon zest in a small saucepan. Cook over medium heat, stirring occasionally, until the berries have softened and the mixture has thickened about 10 minutes. Set aside to cool slightly.
  2. Combine the rolled oats, water or milk, and a pinch of salt for the porridge in a medium saucepan. Cook over medium heat, stirring frequently, until the mixture boils. Reduce the heat to low and simmer, stirring occasionally, until the oats are fully cooked and have absorbed the liquid, about 5-7 minutes.
  3. Once the porridge is ready, please remove it from the heat. If you prefer a thinner consistency, stir in more milk or water until you reach your desired texture.
  4. Serve the warm porridge in bowls, topped with the blueberry compote. Add additional honey or maple syrup if you like it sweeter.
  5. You can garnish with your choice of toppings, such as sliced almonds, chia seeds, or a dollop of yogurt.
