In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Stir in the capers and bring the mixture to a simmer.
Reduce the heat to medium-low and return the chicken to the skillet. Simmer until the sauce has reduced by half, about 5 minutes.
Remove the skillet from the heat and stir in the butter until melted and the sauce is slightly thickened.
Stir in the chopped parsley and adjust the seasoning with salt and pepper if necessary.
