Method
 

  1. Combine the strawberries, raspberries, and red currants or blackberries in a medium saucepan. Sprinkle the granulated sugar over the berries and add the water, lemon juice, vanilla extract, and a pinch of salt.
  2. Place the saucepan over medium heat and stir gently to combine the ingredients. Allow the mixture to simmer, then reduce the heat to low.
  3. Let the compote simmer for 10-15 minutes or until the berries soften and the sauce slightly thickens. Be sure to stir occasionally to prevent sticking and to ensure even cooking.
  4. Once the compote has reached your desired consistency, please remove it from the heat. You can serve it warm or cool it to room temperature before transferring it to a jar or container.
