  • 2 cups plain Greek yogurt non‑fat or low‑fat
  • 1 cup mixed berries fresh strawberries, blueberries, raspberries, or blackberries
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • pinch sea salt
  • 1 tbsp chia seeds
  • 1 tbsp sliced almonds
  • 1 tbsp coconut flakes
  • 1 cup granola low‑sugar
  • 4 jar clear glass mason jars

Method
 

Steps
  1. In a medium bowl, whisk together the Greek yogurt, honey, vanilla extract, lemon zest, and pinch of sea salt until smooth.
  2. In a separate bowl, gently mash the berries with a fork and stir in a teaspoon of honey to release their juices.
  3. Place a spoonful of the yogurt mixture at the bottom of each jar.
  4. Add a layer of mashed berries, then sprinkle chia seeds, sliced almonds, and coconut flakes.
  5. Top with a generous spoonful of granola.
  6. Repeat the layering until the jar is full, finishing with a final layer of granola.
  7. Seal the jars with lids and refrigerate overnight.
  8. In the morning, give each parfait a gentle stir, top with fresh berries or extra granola if desired, and garnish with a sprig of mint.

Notes

Store the parfaits in the refrigerator for up to 3 days. Add granola fresh in the morning to keep it crunchy. Reheat not required; let sit at room temperature for 10 minutes if you prefer a warmer texture.
