  • 1 lb sushi‑grade salmon cut into 1/2" cubes
Rice
  • 2 cups sushi rice
  • 2.25 cups water
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • pinch of salt
Toppings
  • 1 avocado diced
  • 1 cup cucumber diced
  • 1 cup edamame shelled
  • 1/4 cup green onions sliced
  • 2 tbsp sesame seeds toasted
  • 1 tbsp pickled ginger
Sauce
  • 3 tbsp soy sauce low‑sodium or tamari
  • 1 tbsp sesame oil
  • 1 tsp sriracha
  • 1 tsp honey
  • 1 tsp lime juice
Optional Garnish
  • nori strips
  • wasabi
  • chili flakes

Method
 

Steps
  1. Rinse the sushi rice until water runs clear, then combine with water in a pot and bring to a boil. Reduce heat, cover, and simmer for 18 minutes before letting it steam for 10 minutes.
  2. While the rice rests, prepare the toppings: dice avocado and cucumber, shelve edamame, slice green onions, and toast sesame seeds in a dry pan.
  3. Whisk soy sauce, sesame oil, sriracha, honey, and lime juice to make a quick dressing.
  4. If using raw salmon, toss diced salmon with a pinch of sea salt and the dressing. For a seared version, heat a skillet over medium‑high heat, add oil, and sear salmon cubes 2 minutes per side until 145°F.
  5. To assemble, place a scoop of rice in each bowl, then arrange salmon, avocado, cucumber, edamame, and green onions. Sprinkle toasted sesame seeds, pickled ginger, and optional nori strips, then drizzle with remaining dressing.

Notes

Store rice and toppings separately for up to 24 hours. Assemble just before serving to keep avocado crisp. Use sushi‑grade salmon for raw preparation; sear to 145°F for safety.
