Ingredients
  

Marinade
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 1/4 cup fresh lime juice from 2 limes
  • 2 cloves garlic, minced
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt
  • 1/2 tsp smoked paprika optional
Protein
  • 1.5 lb boneless skinless chicken breast cut into 1‑inch cubes
Skewers & Veggies
  • 1 pack bamboo or metal skewers
  • 1 medium red bell pepper sliced
  • 1 small red onion sliced
  • 1 cup cherry tomatoes

Method
 

Steps
  1. Whisk together olive oil, honey, lime juice, minced garlic, pepper, salt, and smoked paprika in a bowl.
  2. Add the chicken cubes, tossing to coat evenly.
  3. Cover and refrigerate for at least 30 minutes (up to 24 hours for deeper flavor).
  4. Preheat a grill to medium‑high heat.
  5. Thread chicken onto skewers, alternating with bell pepper, onion, and cherry tomatoes if using.
  6. Brush the skewers with a little extra glaze before each turn.
  7. Grill 3–4 minutes per side, turning once, until the internal temperature reaches 165°F (74°C) and the glaze caramelizes.
  8. Serve immediately with lime wedges on the side.

Notes

Store leftover skewers in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave until hot. For a vegetarian version, use tofu or halloumi instead of chicken.
