- Whisk olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, smoked paprika, salt, and pepper in a bowl.
- Pour the mixture over the chicken thighs, ensuring even coating. Cover and refrigerate 30 minutes to 4 hours.
- Preheat grill to medium‑high (≈400 °F). Toss corn, bell pepper, onion, jalapeño, cilantro, lime juice, cumin, and salt for salsa.
- Grill chicken skin‑side down 6–7 minutes, then flip and grill 5–6 minutes until internal temp reaches 165 °F.
- Rest chicken 5 minutes, then top with corn salsa.
