Method
 

  1. Preheat the oven to 400°F (200°C). While the oven is heating, prepare a baking dish by lightly greasing it with olive oil or non-stick cooking spray.
  2. Place the salmon fillets in the baking dish, skin-side down. Drizzle each fillet with olive oil, then season with garlic powder, dried or fresh dill, salt, and pepper.
  3. Bake the Salmon in the oven for about 12-15 minutes or until it flakes easily with a fork. The cooking time may vary depending on the thickness of the fillets.
  4. Remove the baking dish from the oven and carefully crack an egg over each salmon fillet to keep the yolk intact.
  5. Return the dish to the oven and bake for 6-8 minutes until the egg whites are set but the yolks are still runny. You can adjust the cooking time if you prefer your eggs more or less done.
  6. Once cooked to your liking, remove it from the oven and let it rest for a few minutes.
  7. Garnish with fresh dill or parsley, and serve immediately with lemon wedges.
