Form the mixture into burger patties, about 1/2 inch thick.
Preheat a grill pan or skillet over medium heat. Once hot, cook the patties for 5-7 minutes on each side or until fully cooked through and golden brown on the outside.
While the patties are cooking, prepare your whole-grain buns and toppings.
Once cooked, assemble your burgers by placing a lettuce leaf on the bottom bun, followed by the chicken patty, tomato slices, avocado (if using), and a dollop of mustard or sauce.
Top with the other half of the bun and serve immediately.
