Method
 

  1. Combine the ground chicken, grated zucchini, carrot, minced garlic, chopped onion, breadcrumbs, parsley, egg, smoked paprika, salt, and pepper in a large mixing bowl. Mix well until all ingredients are evenly distributed.
  2. Form the mixture into burger patties, about 1/2 inch thick.
  3. Preheat a grill pan or skillet over medium heat. Once hot, cook the patties for 5-7 minutes on each side or until fully cooked through and golden brown on the outside.
  4. While the patties are cooking, prepare your whole-grain buns and toppings.
  5. Once cooked, assemble your burgers by placing a lettuce leaf on the bottom bun, followed by the chicken patty, tomato slices, avocado (if using), and a dollop of mustard or sauce.
  6. Top with the other half of the bun and serve immediately.
