Method
 

  1. Heat the olive oil in a large, deep skillet or frying pan over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and diced bell pepper, cooking until the pepper softens, approximately 5 minutes.
  3. Sprinkle cumin, smoked paprika, coriander, and cayenne pepper in the ground. Cook for another 2 minutes, allowing the spices to release their flavors.
  4. Pour in the crushed tomatoes, season with salt and pepper, and simmer for 10-15 minutes until the mixture thickens slightly.
  5. Create small wells in the tomato mixture and crack an egg into each well. Cover the skillet with a lid or aluminum foil and cook until the eggs are done to your liking (about 5-7 minutes for soft yolks).
  6. Garnish with fresh cilantro or parsley and crumbled feta cheese if desired.
  7. The entire dish takes approximately 30-35 minutes to prepare and cook. Spend the first 10 minutes prepping your ingredients and the remaining 20-25 minutes cooking.
