Recipe Name: Authentic Turkish Kofta

Ingredients:

  • 500g ground lamb or beef (or a mix of both)
  • 1 large onion, finely grated
  • 3 cloves of garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • Salt and black pepper to taste
  • Olive oil for brushing

Directions:

  1. In a large mixing bowl, combine the ground meat with the grated onion, minced garlic, chopped parsley, and all the spices. Season generously with salt and pepper.
  2. Using your hands, mix the ingredients until they are well combined. Be careful not to overwork the meat, as this can make the Kofta challenging.
  3. Divide the mixture into equal portions and shape them into elongated meatballs or around pre-soaked wooden skewers if you prefer Kofta kebabs.
  4. Preheat your grill or grill pan to medium-high heat. Brush the Kofta with a bit of olive oil to prevent sticking.
  5. Grill the Kofta for 4-5 minutes on each side or until they are nicely browned and cooked through.
  6. Once cooked, remove from the grill and let them rest for a couple of minutes before serving.

How to Prepare:

To prepare the Kofta, soak your wooden skewers in water for at least 30 minutes if you’re making kebabs. This prevents them from burning on the grill. Next, ensure all your ingredients are measured and ready to go. Grate the onion, mince the garlic, and finely chop the parsley for a fresh flavour. Mix the spices in a small bowl so they’re evenly distributed when added to the meat.

Storing Leftovers:

Any leftover Kofta can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan over medium heat or microwave until warmed through. You can also freeze the cooked Kofta for up to 1 month. Thaw in the refrigerator overnight before reheating.

Food or Drink Pairings:

Turkish Kofta pairs wonderfully with fluffy rice pilaf, a fresh cucumber and tomato salad, or warm pita bread. For a refreshing drink, try a glass of Ayran, a traditional Turkish yoghurt drink, or a light, fruity red wine to complement the rich flavours of the meat.
